I bought the Italeri American Superliner kit. I ordered a daycab panel and twin airbreathers from Auslowe in Australia and I'm going to shorten the chassis slightly. My truck is going to be a "war rig" a-la Mad Max. The scenario is that if Max runs the truck from Bartertown to Gastown and back, he'll get as much gas as he can carry in his Interceptor.

Long story short, I know I can use the factory tires an it'll probably be fine since this is a custom build, but I wanted to get some "off road" tires. I'm probably going to need them for the tanker trailer as well. I'm a complete novice at auto modelling an I'm hoping someone can guide me in the right direction.

You may have better luck doing it in 1/32 as I am. Much more selection of resin tires out there with the exact tread pattern as in the move.

Where are you getting 1/32 resin truck wheels & tires? The only place I know of for 1/32 wheels in Don Mills Models. I have several 1/32 trucks that are on hold until I find decent wheels & tires.

I've got a few leftover sets from when I helped the now defunct Vajra with their Buffalo. Even though they are 1/35, because they are so large they scale out perfectly on a 1/32 frame. There are wheels sets made for the current Bronco Buffalo which will work as well. (And probably the Meng Cougar.)
I was unable to visit that link provided above as I was on an iPad at the time (and thus do not know how to cut and paste) but I've since visited the site and those 1/25 Michelins look great. The guy I'm building this for may want me to switch to 1/25 if he finds out) I'm glad that site was posted - I found it quite by accident several months ago and discovered they make a US recoilless rifle which will work perfectly with my old MPC "Korean War Jeep," and then couldn't find it again.
The tires from Legend Productions or Kinetics Maxx Pro are also the correct pattern, but with a smaller diameter. They also don't have the deep rear hubs you need, so I'd say go with Buffalo resin wheels if you want to go the 1/32 route.
At any rate, if I do end up building a 1/25 War Rig, I'll probably finish out my 1/32 one for myself now that I've started it. Please see parts request in Buy Sell Trade forum.

Very good source links. I just went through 3 cups of coffee worth of browsing.

My only suggestion is off of die cast vehicles or other plastic kits. A couple examples pictured below:

I've got a great deal for you. Even though the title of the thread is for 1/24 and 1/25 tires, you're asking for 1/32 ones. All of the ones listed below are the same diameter or slighty larger (beefier and cooler) compared to the ones in the 1/32 Freightliner kit. Plus, these have great tread and hub detail, and are not disappointingly hollow backed like the kit tires.

For the trucks that I'm building (Mack R-Series, Ford AeroMax, Freightliner) I'm looking for highway tread. From what I can tell, the RMA35051 has sort of a highway tread.

Also, the RMA35138 is a Striker detail set:

The two RMA 35051 sets indeed have a highway type tread.

MRA (not RMA, which is why I think there is a misprint) 35138 is a wheel set for the SPz.2 LUCHS A2 - a Modern Michelin tread like what is found on current US MRAPs. It is an eight wheel set.
